S'introdueix la plata al forn calen (180ºC) i es vigila que la massa estigui cuita. Quan es veu cuita s'encén el grill per desfer el sucre. Després s'afegeix el iogurt, l'oli i la ratlladura del llimó. Es barreja i s'afegeix la farina poc a poc.&lt;br /&gt;En un motllo s'aboca el caramel al fons i es reparteixen els talls de pinya. Un cop està tot barrejat hi afegim la ratlladura. Es couen les pomes tallades a daus fins, amb sucre, aigua i algun licor de poma.&lt;br /&gt;Es posa la massa a la plata del forn i es col·loquen les pomes per sobre. Damunt de les pomes s'hi posa sucre. Remenar una mica i afegir l'aigua i la llet, remenar fins que quedi una pasta fina i sense grumolls (sinó queda fi es pot passar per un colador). Deixar reposar durant 3 hores.&lt;br /&gt;Per coure les flors, posar en una paella fonda força oli i deixar que s'escalfi. Els motllos de les flors cal que s'escalfin en el mateix oli i sucar-los en la pasta vigilant que la pasta no cobreixi el motllo. Llavors es fregeix a l'oli. Deixar que el sucre es fongui. Afegir el suc de llimó. Posar els fulls de gelatina en aigua freda. Triturar les maduixes amb el sucre. Muntar la nata sense sucre. Barrejar-ho tot amb la gelatina una mica cuita i a la qual se li haurà retirar l'excès d'aigua. Els rovells es baten amb la meitat del sucre fins que siguin cremosos. S'afegeix la mantega fosa, el suc d'una taronja, les ratlladures d'una taronja i 1/2 llimó. Es torna a batre.&lt;br /&gt;S'afegeix la farina amb el llevat i les clares muntades.&lt;br /&gt;Es posa en un motllo i es cou al forn fort.&lt;br /&gt;En un casso es desfà al foc la resta del sucre amb una mica d'aigua i es cou fins que quedi un almívar, llavors s'afegeix el suc de les taronges. Es deixa refredar. Quan estiguin barrejats hi afegim la xocolata i removem amb una cullera per que es reparteixi bé.&lt;br /&gt;Aboquem la massa en un motllo que prèviament haurem sucat amb oli i farina. Posem per damunt unes quantes cullerades de sucre que cobriran la superfície, d'aquesta manera es formarà una capa cruixent.&lt;br /&gt;Ho podem dins del forn calent a 180ºC durant aproximadament 40 minuts.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Per a la crema&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 ous&lt;br /&gt;sucre (el mateix pes dels ous)&lt;br /&gt;1 cullerada i 1/2 d'aigua&lt;br /&gt;&lt;br /&gt;Batem els ous i els hi afegim el sucre. Ho posem a coure a foc mitjà. Quan comenci a bullir ho retirem del foc, hi afegim l'aigua i ho batem. Ho tornem a posar al foc i esperem que bulli durant 2 ó 3 minuts perquè agafi consistència.&lt;br /&gt;&lt;br /&gt;Partim la coca (freda) per la meitat i la mullem amb un almívar que haurem fet amb tres cullerades de sucre dissolt en una mica d'aigua. Extenem la crema sobre la meitat de baix de la coca i tapem. La restauradora les ha portat netes de casa, les ha netejat amb aigua i desgreixant. La mestressa encara no ho sap però davall d'aquesta capa de pintura en trobarà dues més.
